A Story with a Crunch: The Andalusian Charm of Perelló Regañás

If you haven’t yet come across Perelló regañás, these Andalusian crackers offer a distinctive taste of tradition. Rustic, flavourful, and made with care, they are the result of a slow process that respects both ingredients and heritage.

A Handcrafted Heritage

Made in Córdoba with care and tradition, every Perelló regañá is shaped and cut by hand, starting from the moment the dough is kneaded.

The dough itself is a simple blend of sourdough, extra virgin olive oil, and rock salt from nearby Jaén—three ingredients that speak of the land. The result is a cracker that’s light yet structured, golden and crisp, with a subtle depth of flavour. For the smoked paprika variety, a final brushing of oil and pimentón adds warmth and character.

From Everyday Staple to Artisanal Craft

Regañás have long been part of everyday life in southern Spain. Historically made for their durability, they were a staple for workers in the fields and at sea. Over time, this simple food evolved. What was once practical has become something more refined—an artisanal product with a deeper attention to taste and texture.

Un Aperitivo Perfecto!

Regañás are incredibly versatile. Their crispness makes them ideal for pairing with dips, cheeses, or cured meats. Some of our favourite combinations:

  • Classic regañás with soft goat’s cheese and a little honey.
  • Salt flake regañás alongside salsa verde or slices of Iberico ham.
  • Smoked paprika crackers with baba ganoush or spicy chorizo.

Whether served as part of a generous spread or enjoyed with a glass of wine, Perelló regañás bring a little of Andalucía’s culinary heritage to your table.
