Silky smooth and packed with flavour, this butter bean dip is a fresh, satisfying alternative to classic hummus. With its rich, velvety texture and subtle nutty flavour, it makes a perfect accompaniment to crackers, breadsticks, or fresh vegetables. You can also spread it onto sandwiches or wraps for a creamy, protein-packed upgrade. Quick to whip up and endlessly versatile, it’s your new go-to dip for snacking or entertaining.
Method
Drain and rinse the butter beans. Put the garlic clove, beans, olive oil, peanut butter, lemon juice, salt and and pepper into a food processor and blitz to a smooth purée. You might need some water to make the dip a little thinner. Add tablespoon by tablespoon to desired consistency.
Taste for seasoning, adding more lemon juice and salt if you feel it needs it.
