    Castellana large green lentils have a complex and multi-layered flavour, widely used across Spain. They are a Spanish variety, with a soft, giving texture. The savoury aroma has citrus hints with mineral elements and an earthy depth balanced by hints of white pepper. These ready-cooked lentils are ideal for use in an Indian style daal or as a meat substitute in a vegetarian lasagne or shepherd’s pie.

    What is the difference between Castellana lentils and Puy lentils?

    Castellana lentils are a larger variety which absorb liquid well and break down in cooking to give a thick, satisfying texture. They are fantastic in a daal. Puy lentils, or their Spanish equivalents, Pardina lentils, hold their shape better and work particularly well in salads.
