    Gazpacha Whole Olives

    Gazpacha olives are particularly popular in the Mediterranean south of Spain, particularly in the olive growing regions of Andalusia. Spanish green Manzanilla olives are marinated with a mixture of pickled vegetables, carrots and onions, garlic cloves and guindilla chillies. The result is a deeply satisfying combination of flavours, textures and colours.

    Why do these olives have the same name as the Spanish chilled soup?

    This mixture of olives and pickled vegetables is called Gazpacha, the famous Spanish chilled soup is called Gazpacho. The olives are named after the soup because the combination of vegetables in the pickles, and their colour, are reminiscent of Gazpacho.
