    These baby capers are very small and firm, providing the best texture and flavour. Fermented in brine, they are an excellent ingredient in many Mediterranean dishes. With a combination of floral, citrus and salty notes they are an excellent accompaniment to smoked  fish, or in a classic caper sauce.

    These sharp and salty baby capers are perfect for many Mediterranean dishes

    Are capers better preserved in salt or vinegar?

    The very best capers tend to be those preserved in sea salt or brine. It is the size of the caper that is probably more important and they are graded according to their diameter. The smaller the diameter the younger the flower was when picked, and the firmer the texture. Non pareil capers are less than 7mm in size.
